Question HDRI backgrounds fro compositing

I wasn't sure where to put this so I created the thread here.

How would I go about creating HDRI backgrounds for lighting and reflections when the subject is moving around quite a lot in the enviroment? For example, a character walking through a hallway, turning around a corner, while the camera follows him. A simple spherical backdrop would be entirely inaccurate here.

Any ideas?
